Austin Slow Burn Grilled Pimiento Cheese Sandwich With Bacon
The salty bacon combined with the creamy cheese with a hint of Hatch chile flavor will hit the spot.
- 2 slices bread
- 4 oz Austin Slow Burn pimiento cheese (or 1/2 cup)
- 3 slices crispy cooked bacon
- 2 tbsp mayonnaise
Preheat a small skillet (preferably cast iron) over medium heat.
Then, spread half of the mayonnaise on the first slice of bread and season with salt and pepper. On the second slice of bread, spread the Austin Slow Burn pimiento cheese.
Now that your skillet is warm, place the first piece of bread with mayonnaise side down in the skillet and top with bacon. Place the second piece of bread with the pimiento cheese on top of the bacon. Spread remaining mayonnaise on top slice of bread and season with salt and pepper.
When the bottom slice is lightly browned, flip the sandwich and brown on the other side. The sandwich is finished when both sides are golden and cheese is oozing out of the sides of the sandwich.
